跟博多是不同湯底,這鍋裡加了豬背脂去熬煮,兩鍋湯都會用木槳去翻攪,為什麼要翻攪呢?查了一下有一說是要增加湯裡的空氣含量,照片裡翻攪完的鍋內充滿泡泡是不是感覺很熟悉(泡沫紅茶搖出細緻泡沫後會更好喝同理),

另一說在下面影片裡會提到「油分と水分がよく混ざり合った状態」,整理影片中提到的部分簡單的說就是要把豬背脂經熬煮溶出的醇脂味跟湯底均勻攪拌融合,現在日本連鎖店有的會用比較快速的大台均質機,有耐心看完的話後面有攪拌豬背脂湯鍋的畫面,
MEGA外觀上跟博多一樣配菜也一樣,那片厚實叉燒依舊讓人垂延,

MEGA的湯口味濃郁香醇對喜好口味偏重的人連湯一併喝完絕對不是問題,而且湯的口感也比博多較濃稠,尤其吃完麵喝湯底時會有種喝稀一點米漿的類似口感,

店內有寫如果麵"吃完"覺得不夠可加麵$20(須保留半碗湯不另外加湯),加麵是另外放在碗裡送來,麵裡會淋上些許醬油,加麵一樣選了最硬的鐵絲等級,麵體吃起來比較有口感搭配MEGA剛剛好,
